Recipe 1: Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

  1. Rinse and cook quinoa according to package instructions, using vegetable broth.
  2. In a large bowl, combine cooked quinoa, cucumber, bell pepper, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Refrigerate for at least 1 hour before serving.

Recipe 2: Baked Salmon with Roasted Vegetables

Ingredients:

  • 2 salmon fillets
  • 2 cups mixed vegetables (carrots, broccoli, cauliflower)
  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
