Savory Chicken Stir-Fry

A quick and healthy weeknight meal that’s bursting with flavors!

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 cloves of garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and chicken broth. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add garlic and sauté for about 1 minute, until fragrant.
  4. Add chicken slices to the skillet and cook until browned and cooked through.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add mixed vegetables and stir-fry for about 5 minutes, or until tender.
  7. Return the chicken to the skillet and pour the sauce mixture over the chicken and vegetables.
  8. Cook for an additional 2-3 minutes, stirring occasionally, until the sauce thickens.
  9. Season with salt and pepper, to taste.
  10. Serve hot with steamed rice or noodles.

Cheesy Baked Ziti

A classic Italian pasta dish that will please both kids and adults!

Ingredients:

  • 1 pound ziti pasta
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 2 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ziti pasta according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add garlic and sauté for about 1 minute, until fragrant.
  5. Add marinara sauce, dried oregano, salt, and pepper. Cook for 5 minutes.
  6. In a large mixing bowl, combine cooked ziti, marinara sauce, shredded mozzarella, grated Parmesan, and ricotta cheese.
  7. Transfer the mixture to a greased 9×13-inch baking dish.
  8. Cover the dish with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 15 minutes, until the cheese is golden and bubbly.
  10. Let it cool for a few minutes, then serve.
